Rollos (Bolivian Cheese Pastry)

Sift together:
4 cups flour
4 tsp baking powder
1 tsp salt
2 Tbsp sugar

1/2 cup margarine or butter, softened
1 cup warm milk
4 egg yolks (save the whites for later on)

Mix well.  Divide dough in half.  Pat out half in a greased 9″x13″ pan.

Beat 4 egg whites until foamy.  Mix in 1/2 lb shredded Monterey Jack or Mozzarella cheese.

Spread half of egg and cheese mixture on top of dough in pan.  Pat remaining dough on top and spread remaining cheese mixture on top.  Bake for 30 minutes at 350F until golden brown.  Cut into squares to serve.
