One of our staple go-to easy dinners is a Dutch favourite of mine. I will admit right off the starting line that, although I DO in fact have a recipe to make these from scratch myself, I find it much more convenient to keep a box or two of mix on hand. Also, that gives me an excuse to go to the Dutch food store a couple times a year to check things out and maybe come home with some spekulaas or kruid notjes (love these tiny cookies!).
They’re kind of rounded on both sides from cooking in their special poffertje maker pan. My pan is cast iron and was a very much appreciated gift from my in-laws one Christmas. I had searched everywhere and could not find the pan though I have since seen lightweight stainless steel versions at the Dutch store.
